It is very simple because most of the payment provide send payment confirmation link of registered email ID, Google Algorithm reads title of email and confirm that you are buying anything online, If you use Google services then it is very difficult to hide your activity from Google.

Google does not share data to any third party but use it to show relivent ads to their user to increase their advertising revenue.
